Casein is a major constituent of cheese, rich in amino acids and phosphorus. It is the primary protein of mammalian milk. Caseinates are good source of nutrients, with approximately 90% protein content. Caseinates possess aeration, emulsification, viscosity, and binding properties. Due to its immense functional benefits, these ingredients have their usage in baked goods such as cheesecake, puddings, frostings, and whipped toppings. Among various types of caseinates, sodium and calcium caseinates are the widely used ones. Due to the property of solubility these caseinates are used with powders that require instant dispersion into water. Caseinates are segmented by type such as ammonium, potassium, calcium, sodium and others. Each of these types has been studied to give a comprehensive analysis of the global casein and caseinates market.
