Smoked fish is fish that has been processed by smoking. At first, this was done as a preservative for the winter season or for more difficult times. At the present time, fish is easily preserved by refrigeration and freezing and the smoking of fish is normally done for the demand of unique taste and flavor imparted by the smoking process. The main processes in the making of smoked fish are salting, cold smoking, cooling, packaging and storage. Smoking, from the old times, integrates the effects of salting, drying, heating and smoking. General smoking of fish is either cold (28 to 32°C) or hot (70 to 80°C). In cold smoking, the flesh is not cooked and hence refrigerated storage is essential until consumption, while dry-cured hams are cold-smoked and need no refrigeration. At present, there are two main methods of smoking fish: the traditional method and the mechanical method.
