Fruit puree is a processed fruit form prepared by cooking, pressing, grounding and sieving fresh fruits. The obtained creamy paste semi-liquid is used as a healthy alternative to oils in cooking. Consumers who are looking to cut calories use fruit purees to replace oil or butter in certain baked goods, which can also improve the flavor but in a healthy way. Purees are refrigerated to increase their shelf life and some fruit purees are pasteurized to decrease the microbiological loading. Fruit purees retain the nutritional content of fresh fruits as no fibrous part and juice are excluded in the process. In the processing stage, the seeds of fruits are generally removed; but seeded variants of some purees are also available.
