Advanced glycation end products (AGEs), also known as glycotoxins or atherogenic molecules, are the diverse group of highly oxidant compounds. AGEs are formed through a non-enzymatic reaction between reducing sugars and free amino groups of proteins, lipids, or nucleic acids. This reaction is also known as the Maillard or browning reaction. Advanced glycation end products (AGEs) are used to treat pathological conditions such as diabetes mellitus (DM), cardiovascular disease, Alzheimer's disease, cancer, and natural aging.
