Pectin is a polysaccharide found in the cell wall of plants which provides cohesion and stability to their cells and tissues. Commercially, it is extracted from citrus peels or apple pomace under mildly acidic conditions. Due to its gelling, thickening and stabilizing properties; pectin applications are rising not only in the food and beverage industries but also in the pharmaceutical and cosmetic industries where it is used to boost the viscosity and stability of gels or creams.
