Abstract

REPORT HIGHLIGHTS

  • U.S. production of commodity-grade animal fats and major vegetable oils amounted to 13.1 million metric tons in 2010 and is projected to decrease to 12.9 million metric tons in 2011. It is expected to reach 13.3 million metric tons by 2016 at a compound annual growth rate (CAGR) of 0.6% between 2011 and 2016.
  • U.S. production of major vegetable oils amounted to 10 million metric tons in 2010. It is projected to dip slightly to 9.8 million metric tons in 2011, and subsequently increase at a CAGR of 0.3% to reach nearly 10 million metric tons in 2016.
  • U.S. production of commodity grade animal fats amounted to 3.1 million metric tons in 2010 and is projected to stay at 3.1 million metric tons in 2011. It is expected to grow at a CAGR of 1.4% between 2011 and 2016, and reach nearly 3.4 million metric tons in 2016.

STUDY GOALS AND OBJECTIVES

BCC conducted this study to assess recent historical trends in the production and consumption of fats and oils and to develop market projections through 2016. The primary geographical focus of the study is the United States. However, given the global role of some of the fats and oils, the study covers relevant international aspects of the global production and end use of these commodities. The report details the production and applications of fats and oils in various foods and industrial products. Additionally, key factors that influenced past trends and are projected to contribute to future developments in the industry are identified. The report represents a resource for exploring the continuing importance of fats and oils in the U.S. and global economies.

REASONS FOR DOING THE STUDY

The average person has some knowledge about fats and oils and the implications of dietary fat consumption. There is also an abundance, and sometimes shifting, expert opinion on these issues. This study takes an unbiased look at the data in order to focus attention on the fundamental information about what fats are currently being consumed, how much of each, and where we might expect to see shifts in consumption trends over the foreseeable future and by how much. The analysis of consumption covers both food (edible) and industrial (inedible) uses. The information on industrial uses is beneficial in its own right, but it also serves to “balance” the (sometimes sensationalized) information on edible fat consumption.

SCOPE OF REPORT

This report is a complete update of the BCC report on oils and fats published in 2004. The current report covers recent developments in the U.S. and global markets for commercial-grade animal fats and major vegetable oils. The report includes a detailed examination of each type of fat and oil, its production, apparent consumption in foods and industrial products, and related international aspects. Also documented are the technological issues relating to the manufacture of the products, and recent patents awarded for innovations in the industry. For the purpose of the report, the global market comprises the following regions: Asia-Pacific, European Union (the EU), North America, and the rest of the world (ROW). The report includes profiles of major U.S. producers of fats and oils.

METHODOLOGY AND INFORMATION SOURCES

This report reflects the result of extensive research covering primary and secondary information sources. BCC surveyed databases from the U.S. government and, international organizations, as well as publications by industry and relevant professional associations to create a quantitative and qualitative analytical framework for the findings presented in this report. Communications with various experts on oilseeds, related products, and global trade provided supplemental information on various aspects of the study.

預計2016年美國動物性脂肪及主要植物油的製造量將達到1,330萬公噸

Global Information, Inc.已開始銷售BCC Research所發行的報告書「Oils and Fats: Applications in Foods and Other Markets (美國的食用油脂及其他油脂市場)」

本報告書預測,美國2011年的油脂製造量預計為1,290萬公噸,之後以複合年成長率(CAGR)0.6%增加,2016年時達到1,330萬公噸。

2011年美國主要植物油的製造量為980萬公噸,之後以CAGR 0.3%增加,預計2016年時達到1,000萬公噸左右。

此外,2011年動物性脂肪的製造量是310萬公噸,預計之後以CAGR 1.4%推移,2016年時達到340萬公噸左右。

美國油脂的消費分成食用及產業用2種。

食用的有烘培及油炸用油、人造奶油、沙拉和料理用油。產業用包含飼料、脂肪酸、潤滑油、生質柴油、塗料、漆、樹脂、塑膠及肥皂。

油脂通常作為對人類細胞凝結效率佳的能源。

而且油脂是類脂體或中性油脂,具有由1分子的甘油和3分子的脂肪酸構成的化學構造。

甘油是用有甜味、無臭、無色的酒精,在甘油所具備的諸多性質中,有親水性和高黏度性二種。
